As you open higher stadiums to play in, lower stadiums will gradually be closed off with a "COMPLETED" lock sign placed on it.

Once closed off, you will no longer be able to play in that stadium, but even if you haven't maxed out the trophy in a closed stadiium, the trophy count will automatically be adjusted to the max for that stadium.
